In all honesty, I have long held a strong aversion to sweet potatoes. I find them quite unappealing.
This sentiment likely stems from my childhood experiences at a prestigious daycare on 63rd and Pulaski in Chicago, known as The Learning Circle. The owner, affectionately referred to as Grandpa, was a chef who prepared us exceptionally elaborate lunches.
At the time, I did not fully appreciate his culinary skills as I would today. He frequently served sweet potatoes, likely due to their nutritional value and his genuine care for our well-being, yet I steadfastly refused to eat them.
In the 1970s, the norms were different; I was often required to remain at the table until I consumed a sufficient amount to be allowed to take a nap. I recognize now that such practices would be considered inappropriate, but that was the reality of the time.
Since my unfortunate experience with potatoes in the 1970s, I have avoided sweet potatoes. However, Mister Tipsy has a great fondness for them, which prompted me to prepare Air Fried Sweet Potatoes with Magic Butter.
He thoroughly enjoys them, and I must admit that during the few occasions each year when I make them, I find them quite delightful as well. The skin is both crispy and flavorful, infused with a variety of tastes, and the butter is exceptional.

Simplicity of the Recipe
This recipe is quite straightforward. The potatoes are simple to prepare.
The recipe card below provides instructions for using an air fryer, but it can also be modified for oven use. You can prepare as many or as few as you desire.
The recipe yields enough butter for approximately four potatoes, though I typically prepare a double batch to have on hand.
Be sure to wash and dry your potatoes thoroughly before brushing them with butter and cooking them.
A Hidden Gem
I anticipate that many will be intrigued by the inclusion of buttermilk powder. In reality, buttermilk powder has been available in the baking aisle of your grocery store for years.
I utilize this buttermilk powder in my Famous French Quarter Dressing and various other recipes. If you cannot find it in your local store, numerous options are available on Amazon.
Soy Sauce and Syrup Combination
Indeed, soy sauce, butter, and syrup are brushed onto the skins of these potatoes prior to baking or air frying. This combination enhances the flavor and gives the skins a beautifully caramelized appearance.
You may choose to omit this step, but it significantly enhances the taste of the skins. A reminder: if you consume the skins, these potatoes are quite “cleansing.”
Enhance with Marshmallows
For an even more indulgent treat, consider adding mini marshmallows atop the butter for the final two minutes of air frying.
While I prefer them simply with butter, I occasionally add marshmallows to delight Mister Tipsy.
